Homemade chips are the perfect salty snack. And they’re even tastier when you know you can make the recipe at home. The key to a crispy potato chips is thinly slicing the potato with a mandolin. The mandolin ensures a uniform slice and ensures that all chips bake the same in the oven.
In addition to thinly slicing your chips, you’ll also want to make sure you’re using enough oil and spices. If you leave the skin on the potato, the oil you use to season your potatoes will soften the skin. Kitchen Seer recommends using an oil with a high smoke point to make your chips. Sunflower oil, canola oil and vegetable oil can all handle the heat of your outdoor pizza oven and result in a better, tastier potato chip experience.
The potatoes should bake at 375 F for about 15 minutes. You can pull the tray out and shake the potatoes to prevent the slices from sticking to the bottom of the pan. Also, be sure to add spices when your potatoes come out of the oven. The salt will corrode the hot oil – and in our opinion nothing beats a hot, salty and crunchy slice of potato.
